How Is Feta Cheese Made?
Usually, the milk used to make feta cheese is pasteurised, but raw milk can also be used.
To the milk, lactic acid starter cultures are added to separate the whey. Then rennet is added to set the casein (milk protein).
The curd is separated by draining the whey. Then keep the curd in moulds. After 24 hours the curd becomes firm and you can cut them into cubes. Keep in a metal container for 3 days. Now place them in a brine solution and refrigerate for 2 months.
Brine is a highly concentrated solution of salt i.e., sodium chloride. It is a natural preservative, stops bacteria from growing inside cheese, improves texture, enhances taste and controls moisture.
